I was looking for an easy to make recipe that of course tastes good too.
Dried Bing Cherries are my favorite kind of cherry. It is a much fuller cherry, larger in size than your average tart cherry, and bursting with delicious flavor. Rich in antioxidants and nutrients that support heart health and inflammation reduction, it is the perfect addition, to the stock of food in your kitchen.
We value health, and wellness, fitness, and making healthy choices, always. And, we know it is easy to fall into bad habit making, so before it gets negligent, lets choose wisely on what we consume.
ALL YOU NEED: · 2 cups all purpose flour · 1/2 cup butter · 1.5 tsp baking powder · 1/2 cup dried blueberries · 1/2 tsp salt · 3/4 cup sugar · 2 eggs · 3/4 c milk · 1 tsp vanilla extract
HOW TO MAKE: 1. Preheat oven to 375 2. Mix together dry ingredients (except blueberries), set aside 3. Beat eggs, and mix in wet ingredients (butter, milk, vanilla) 4. Combine the two 5. Fold in blueberries 6. Grease muffin tin, or use liners 7. Fill 3/4 full 8. Bake 25-30 minutes until toothpick inserted in center comes out clean
I halved the recipe because there are only 2 of us living in my house. Also, being vegan, I used the appropriate substitutes like vegan butter and Almond milk. I found that the muffins did not come out as fluffy as I anticipated, although, still, tasted very good.
These muffins are perfect to send your husband to work with. Perfect for your child’s breakfast, with a handful of fruit or even a cup of Stonyfield yoghurt!
